Breakfast Casserole with Hash Browns, Eggs and Cheese is just that.   Hash browns mixed with grated white and cheddar cheese.  Mix in onions and butter and then beat the eggs with some half and half and pour over everything.  Bake until golden brown.

Ingredients
  

  • 8 Cups Frozen Hash Browns or 6-7 Cooked, Grated Potatoes
  • 1/2 Cup Butter
  • 1 Med. Onion, or 3 Tbsp. Minced Onions
  • 2 Cups Monterey Jack Cheese
  • 2 Cups Cheddar Cheese
  • 8 Eggs
  • 3/4 Cup Heavy Cream
  • 3/4 Cup Whole Milk
  • 1 tsp. Salt

Instructions
 

  • Preheat oven to 350°.
  • Chop onion into small pieces.  Sauté in butter.
  • Instead of sautéed onions, you can melt the butter in the microwave and add the minced onion.
  • Layer half of the frozen hashed brown in a 13 x 9 pan. Pour half of the butter and onions over the top.
  • Grate cheese and place half on top of the potatoes.
  • Layer the second half of the potatoes, butter and onions and cheese on the first layer.
  • Mix eggs, salt, heavy cream and whole milk.
  • Pour over the potatoes and cheese.
  • Bake at 350° for 40 minutes.
