Preheat the oven to 350°.
Melt the butter, sugars and maple syrup in a saucepan or in the microwave.
Once the butter is melted, and the sugar is dissolved, add the vanilla, salt and cinnamon. Mix well.
Put all the cereal in a large bowl.
Pour the sugar and butter mixture over the cereal. Using a large spoon stire from the bottom to coat all the cereal with the mixture.
Spoon the mixture onto a large cookie sheet with a lip around the edge.
Bake for 40 minutes in a 350° oven.
Turn the cereal every 10 minutes, with a large spatula, making sure to lift the bottom layer to the top. The idea is to crisp up the cereal and bake the sugar onto the cereal.
After 40 minutes, take the cereal out of the oven and let cool to room temperature.
Crush the apple chips into smaller pieces, about the size of the individual Chex cereal. Add the dried cherries and mix until everything is evenly distributed.
