Oatmeal No Sugar Morning Cake

Oatmeal No Sugar Morning Cake has a banana, nuts, apples, raisins and Craisins to add some natural sweetness. If you are trying to stay away from sugar, you might find this little cake will give you the sweetness you are looking for.

1 Banana, a little overripe 2 Eggs 1/2 Cup Milk 2/3 Cup Greek Yogurt 1 Cup Old Fashioned Oatmeal, not instant oatmeal 1 tsp. Baking Powder 1/2 tsp. Salt 1 1/2 tsps. Cinnamon 1 tsp. Vanilla 1/2 Cup Apple 1/4 Cup Raisins 1/4 Cup Craisins 1/2 Cup Walnuts
Place raisins and craisins in a small microwave safe bowl and cover with water.
Heat on high for 2 minutes. Drain the water and set aside.
Chop an apple into small pieces. Any kind of apple will do.
Break apart the walnuts with your hands into smaller pieces.
Mash the banana with a fork and then using the same fork beat the egg into the banana.
Add the milk and yogurt. Mix well.
Add the oatmeal, baking powder, salt, cinnamon and vanilla. Mix well with a spoon.
Add the raisins, Craisins, apples and walnuts. Fold into oatmeal mixture.
Pour into an 8 x 8 or 9 x 9 pan that has been sprayed with vegetable spay.
Bake at 350° for 35-40 minutes. You want the edges to be brown and when you touch the middle of the cake, it springs back.
Remove from the oven and let cool for 5-10 minutes before cutting it into 9 pieces.
*An 8 x 8 pan will give you higher and denser pieces of cake.
*a 9 x9 pan will give you a little larger pieces but they will be flatter.
