Ingredients
  

  • 1 Banana, a little overripe
  • 2 Eggs
  • 1/2 Cup Milk
  • 2/3 Cup Greek Yogurt
  • 1 Cup Old Fashioned Oatmeal, not instant oatmeal
  • 1 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 1 1/2 tsps. Cinnamon
  • 1 tsp. Vanilla
  • 1/2 Cup Apple
  • 1/4 Cup Raisins
  • 1/4 Cup Craisins
  • 1/2 Cup Walnuts

Instructions
 

  • Place raisins and craisins in a small microwave safe bowl and cover with water.
  • Heat on high for 2 minutes. Drain the water and set aside.
  • Chop an apple into small pieces. Any kind of apple will do.
  • Break apart the walnuts with your hands into smaller pieces.
  • Mash the banana with a fork and then using the same fork beat the egg into the banana.
  • Add the milk and yogurt. Mix well.
  • Add the oatmeal, baking powder, salt, cinnamon and vanilla. Mix well with a spoon.
  • Add the raisins, Craisins, apples and walnuts. Fold into oatmeal mixture.
  • Pour into an 8 x 8 or 9 x 9 pan that has been sprayed with vegetable spay.
  • Bake at 350° for 35-40 minutes. You want the edges to be brown and when you touch the middle of the cake, it springs back.
  • Remove from the oven and let cool for 5-10 minutes before cutting it into 9 pieces.
  • *An 8 x 8 pan will give you higher and denser pieces of cake.
  • *a 9 x9 pan will give you a little larger pieces but they will be flatter.
