
Cinnamon Sugar Star Bread makes any table a little more elegant. You think this bread is hard to make, but it isn’t. It comes together easier than you think. The nice thing is the bread is delicious and the cinnamon sugar mixture adds just enough sweetness to make you think you are eating dessert.
Cinnamon Sugar Star Bread starts with a regular cinnamon roll dough. It comes together with four circles of dough rolled out to 12 inches. Then layered with a cinnamon sugar mixture. The cutting of the bread is the secret. Do a little twisting and before you know it, you have a beautiful Cinnamon Sugar Star.

How To Make Cinnamon Sugar Star Bread
1. The key to any bread making is fresh yeast and a thermometer that can measure the water temperature. Making bread can be a little daunting if you don’t know a few tricks. Measuring the temperature of the liquid when making bread, has made all the difference for me. Make sure the liquid is in between 105° and 120°.
If the temperature is too low, the yeast will not activate. If the temperature is too high, the heat will kill the yeast. That is why for me, using a thermometer is the only way to make bread. I am guaranteed my bread will rise knowing I have activated the yeast at the correct temperature.
2. Warm the milk until it is in between 105° and 120°. Measure the temperature with any thermometer. This inexpensive thermometer on Amazon is my favorite. I keep one in a top drawer in my kitchen. After each use, I wipe it off and replace it in its holder.
Using a thermometer is the best way to make sure your yeast stays alive.
3. Once the milk is the correct temperature, pour in the yeast and add about 1 teaspoon of sugar. Yeast loves sugar, a little goes a long way to get the yeast activated.
4. Melt the butter. I place my butter in the microwave and heat it for 20 seconds. Try and keep the butter at room temperature and not above 120°. If the butter gets too hot, it will kill the yeast.

5. Add the butter to a stand mixer and add the sugar. Beat these two together for two minutes until the sugar starts to dissolve in the butter then add the egg. Beat for another minute.
6. Now, the yeast should be bubbling and have a foam on top. Pour this mixture into the butter and sugar mixture. Mix until well incorporated.
Do you know when yeast is ready to add to the dough?
7. Add 1 cup of flour at a time. Do this until the dough starts to get stiff. Change out the whip attachment to the hook attachment.

8. Add the salt and then continue to add the flour one cup at a time. The dough should begin to pull away from the edges of the bowl in the stand mixer. If the bread does not pull away from the sides, add a little at a time until it does. Continue to knead/mix the bread dough for five minutes. The kneading process is what develops the gluten to create light and fluffy bread.
9. When the dough has a shiny texture and is tight, it is kneaded enough. You can leave the dough in the bowl or transfer it to another bowl that has been sprayed with vegetable oil.
10. Cover with plastic wrap that has also been sprayed with vegetable oil. This allows the bread to rise and not stick to the plastic wrap. Let rise for two hours.
Cover the bread with plastic wrap to keep the heat in when rising.
11. Punch down the dough to create a round smooth ball of dough. Divide the dough into four even balls to create your star.

You can make two smaller stars or one larger star. These instructions are for a large star. If making two smaller stars you need to divide the dough into two even pieces and then follow the instructions below for each smaller star. I like to make two smaller stars. This way I can eat one and give another one to a neighbor or friend.
Just the right amount of cinnamon sugar makes this bread so good.
12. Whisk together the sugar and cinnamon for the filling.
13. Divide the dough into four equal parts. I like using a kitchen scale to weigh each piece of dough so they are the same size. If you have a larger piece, pinch off some dough from the larger ball of dough and add it to the smaller balls of dough until all are equal.

14. Roll the first ball of dough into a 12 inch circle if you are making the large star. If making two smaller stars, the dough will be about 6 – 8 inches. If the dough keeps shrinking into a smaller circle, let it rest for 5 minutes. Once you get the dough rolled out to a thin circle, place it on a piece of parchment paper. This will make it easier for you to transfer the star to a cookie sheet to bake.

15. Brush 1 tablespoon of the softened butter onto the circle of dough. Sprinkle with 1/3 of the cinnamon sugar mixture. Set aside and roll out another circle of dough. Place this on top of the cinnamon sugar of the first circle.
Repeat step 15 two more times as you make four layers of dough on three layers of filling. Once all four layers are put together, trim the circle to make all the edges even. This will create a beautiful star pattern as you fold and pinch sides together.

16. Place a small glass in the middle of the circle. Gently press to create an indent. Don’t cut the dough, it is only going to be used as a guide. Using a pizza cutter or a sharp knife, cut the circle into quarters. You will cut these quarters in half which will create eight arms to your star. Each of these need to be cut in half again to create 16 arms to your star.
17. Take two arms and twist outward two times. Once these arms have been twisted bring them together again and pinch them together at the ends, creating the first point of your star.
18. Repeat step 17 until you have eight arms in your star. Transfer the star to a cookie sheet. Cover with plastic wrap that has been sprayed with vegetable oil. Let rise until the dough is visibly puffy. This can take any where from 30 minutes to an hour.
Bake the bread long enough to have a deep brown crust.
19. Preheat the oven to 350°. Mix the egg and water together with a fork and brush on the pastry before baking.

20. Place the Cinnamon sugar Star Bread in the oven and bake for 35 minutes or until it is golden brown on top. Cover with foil if you think the star is getting too brown. It needs to bake long enough to bake through the middle of the bread.
21. Let the bread rest for 10 minutes and then dust with powdered sugar. You can also add a little milk to the powdered sugar and mix well in a small bowl. Transfer to a plastic bag and cut the corner off with scissors. Drizzle the powdered sugar icing over the Cinnamon Sugar Star Bread.

Ingredients
Cinnamon Sugar Star Bread Dough
- 1 Cup Whole Milk
- 1 Tbsp. Yeast
- 5 Tbsp. Butter
- 1/4 Cup Sugar
- 1 Egg
- 3 3/4 Cup Flour
- 1 tsp. Salt
Cinnamon Sugar Filling
- 1/2 Cup Granulated Sugar
- 1 Tbsp. Cinnamon
- 3 Tbsp. Butter
Egg Wash
- 1 Egg
- 1 tsp. Water
Icing
- 1 Cup Powdered Sugar
- 1 tsp. Milk, Optional
Instructions
- Heat the milk in the microwave to 105° – 120°.
- Add yeast to milk and add sugar to activate.
- Melt the butter.
- Beat the butter, sugar and egg.
- Pour in milk and yeast.
- Add one cup of flour at a time. Add salt.
- Knead the dough for 5 minutes.
- Place dough in a greased bowl, cover with plastic wrap.
- Let rise for two hours.
- Prepare the filling.
- Divide the dough into four equal pieces.
- Roll out each piece of dough into a 12 inch circle.
- Place one circle on a piece of parchment paper.
- Brush with 1 tablespoon of softened or melted butter.
- Sprinkle on 1/3 of the cinnamon mixture.
- Repeat steps 14 – 15 until all four circles of dough have been placed on top of each other.
- Use a small glass to make an imprint of a circle in the middle of the dough.
- Use a pizza cutter or sharp knife and cut from the edge of the inside circle to the outside edge. Cut the dough into fourths. Divide each quarter in half. Now you have eight pieces. Each piece needs to be cut in half again making a total of 16 strips.
- Pick up two strips and twist them outwards 2 or three times.
- Once twisted push the ends together to form a star point. Continue to do this to the next 14 strips until you have eight points.
- Cover with plastic wrap and let rise for an hour and until puffy.
- Preheat the oven to 350°.
- Make egg wash and brush on bread.
- Bake for 35 – 45 minutes until golden brown.
- Place a piece of tin foil over the top if the brad browns too fast.
- Sprinkle with powdered sugar and serve.
- If you want icing, mix powdered sugar and milk. Drizzle over the top of warm bread.
