
Are you watching your weight or know someone that is? I have two nephews who are not eating sugar. This recipe is for them. Oatmeal No Sugar Morning Cake uses the natural sweetness of a banana, apples, raisins and Craisins to satisfy any sweet tooth.
This cake is not overly sweet. It just has a little something. If you have ever gone a stretch without eating sugar, you know how your taste buds change. Eventually, you stop craving the super sweet things and anything with a small amount of sweetness begins to make your taste buds sing.

The things I love about Oatmeal No Sugar Morning Cake is how easy it is to comes together and how delicious it is. I absolutely love food with chunks of deliciousness in them and this cake has chunks of apples, raisins, Craisins and walnuts. Please let me know what you think if you make this. How to Make Oatmeal No Sugar Morning Cake
1. Plump raisins and Craisins in a little boiling water. Fill a small microwave safe bowl with the raisins and Craisins. Cover the fruit with water and heat until the water boils. Leave in the microwave for a minute or two until it cools to the touch. Once you can pick up the bowl, I like to use a small glass bowl, take it out of the microwave. Drain the water from the dish and set aside.
2. Break the walnuts apart. I love breaking nuts with my hands instead of cutting them. When breaking the nuts apart, you get organic shapes that are uniformly the same size. Feel free to chop your nuts, but I challenge you to take five minutes to break the nuts apart with your hands. I would love to hear from you. Oatmeal No Sugar Morning Cake has a banana, nuts, apples, raisins and Craisins to add some natural sweetness. If you are trying to stay away from sugar, you might find this little cake will give you the sweetness you are looking for.
3. Pell and dice an apple. I did not peel my apple because I love the added flavor of the peels. You know how to chop an apple, but it took me a long to realize that slicing the sides off of the core is an easy way to start. This leaves you with two large sides. Now cut the smaller sides off of the core. Lay the flat side down and make 1/8 or 1/4 inch slices and then cut the other direction to create small little chunks of apples.
4. Peel the banana, mash with a fork then add the egg and beat together. You can use an electric hand mixer, but it really mashes quickly and whips up with a fork and a spoon.
Preheat the oven to 350°.
5. Add the milk and yogurt and mix until smooth. Using a spoon to mix all these liquid ingredients takes only a minute and it keeps your dishes to a minimum. You can actually do everything in the 8 x 8 pan if you choose. Reducing your dishes to almost nothing.
6. Add in the oatmeal, baking powder, salt, cinnamon and vanilla. With a spoon this mixes together so quickly. Make sure to use old fashioned oats. Instant oatmeal has its place, but not in this recipe.

7. Fold in the fruit and nuts. The raisins and Craisins should be cooler by now. You do not want them to cook the batter before you place it in the oven. Pour these into the batter, add the chopped apple and the walnut pieces. Mix until everything is covered and then pour into a square pan that has been prepared with vegetable spray.
If you use an 8 x 8 pan, this is the size I used, your cake will be more dense and a little thicker. If you use a 9 x 9 pan, your pieces will be bigger, but a little flatter.
8. Place in a 350° oven for 35-40 minutes. Keep an eye on your cake. Every oven bakes a little differently. You want the cake to be brown around the edges and when you touch the top of the cake, it should spring back.

Equipment
- 8 x 8* or 9 x 9* Baking Dish
Ingredients
- 1 Banana, a little overripe
- 2 Eggs
- 1/2 Cup Milk
- 2/3 Cup Greek Yogurt
- 1 Cup Old Fashioned Oatmeal, not instant oatmeal
- 1 tsp. Baking Powder
- 1/2 tsp. Salt
- 1 1/2 tsps. Cinnamon
- 1 tsp. Vanilla
- 1/2 Cup Apple
- 1/4 Cup Raisins
- 1/4 Cup Craisins
- 1/2 Cup Walnuts
Instructions
- Place raisins and craisins in a small microwave safe bowl and cover with water.
- Heat on high for 2 minutes. Drain the water and set aside.
- Chop an apple into small pieces. Any kind of apple will do.
- Break apart the walnuts with your hands into smaller pieces.
- Mash the banana with a fork and then using the same fork beat the egg into the banana.
- Add the milk and yogurt. Mix well.
- Add the oatmeal, baking powder, salt, cinnamon and vanilla. Mix well with a spoon.
- Add the raisins, Craisins, apples and walnuts. Fold into oatmeal mixture.
- Pour into an 8 x 8 or 9 x 9 pan that has been sprayed with vegetable spay.
- Bake at 350° for 35-40 minutes. You want the edges to be brown and when you touch the middle of the cake, it springs back.
- Remove from the oven and let cool for 5-10 minutes before cutting it into 9 pieces.
- *An 8 x 8 pan will give you higher and denser pieces of cake.
- *a 9 x9 pan will give you a little larger pieces but they will be flatter.
