
Strawberry Rice Crispy treats takes these treats to a new level. They are filled with all the regular, marshmallows, a little butter and rice cereal puffs. These have a secret ingredient of freeze dried strawberries and strawberry emulsion.
Most people make these treats with small marshmallows, but I like to cut large marshmallows into quarters with some kitchen shears. It creates beautiful pockets of marshmallow fluff in each treat. I cut these into heart shapes for Valentine’s but these would be great cut in squares, too!

How to Make Strawberry Rice Crispy Treats
1. Strawberry Rice Crispy Treats start with large marshmallows. Using kitchen shears, cut them into quarters. You do not have to do this. You can certainly use the smaller marshmallows which are not as time consuming. The large marshmallow pockets came from the large marshmallows.
2. The strawberry flavor comes from freeze dried strawberries. There are several places you can purchase them. Certainly online, but locally, Trader Joe’s, Smiths, Harman’s and Maceys all sell them. They come in one ounce pouches or in larger #10 cans. Because I do not use them very often, I like to purchase smaller amounts.
3. Pour the one ounce of freeze dried strawberries into a quart size plastic bag. Seal it and then use a rolling pin to crush the strawberries into a powder. This will be poured into the marshmallow and butter mixture after the marshmallows are melted.
Freeze dried strawberries are the secret ingredient in these treats.
4. Pour the six cups of rice crispy cereal into a large bowl. Cut 20 large marshmallows into quarters with kitchen shears and place on top of the cereal.
5. Butter the bottom of a large cookie sheet with edges. You can also use vegetable spray. I like the taste of butter with these treats.
6. Place 1/2 cup of butter in a sauce pan and melt. Pour the rest of the marshmallows in the saucepan with the butter. Stir until the marshmallows are almost melted. Turn the heat off.
7. Open the plastic bag and pour the crushed dried strawberries into the melted marshmallows. Add the strawberry emulsion to boost the strawberry flavor. Mix everything well and then pour over the top of the cereal and quartered marshmallows.
8. Mix everything well and quickly. Pour the strawberry marshmallow coated cereal onto the buttered cookie sheet. Spread some butter on your hands and push the cereal mixture to the edges.
9. If you are cutting hearts out, spray the edges of the cookies cutter. Cut as fast you can. Enjoy!

Strawberry Rice Crispy Treats
Ingredients
- 1/4 Cup Butter, plus 2 Tbsp.
- 16 oz. Marshmallows, reserve 2 ounces
- 6 Cups Rice Cereal
- 1 oz. Dried Strawberries, Crushed
- 1 tsp. Strawberry Emulsion
Instructions
- Place dried strawberries in a plastic bag.
- Using a rolling pin, crush the strawberries to a powder.
- Place 6 cups of rice cereal in a large bowl.
- Place the left over 2 oz. of marshmallows on top of the cereal.
- Butter a large cookie sheet.
- Melt 1/2 cup butter in a sauce pan.
- Add 14 oz. marshmallows
- Stir until everything until it is melted together.
- Turn off the heat on the stove.
- Add the crushed, dried strawberries and strawberry emulsion and mix well.
- Pour the strawberry marshmallow mixture over the rice ceral.
- Stir well until all cereal is well coated.
- Pour the mixture onto the buttered cookie sheet. Butter your hands and immediately push the mixture to the edges.
- *If cutting the mixture into hearts. Quickly push a heart cookie cutter into cereal mixture.
- Keep cutting the hearts until you have the amount you want.
- Store everything in a plastic bag.
