
Cafe Rio Copycat Queso is smooth and velvety and so delicious! It has the perfect balance of cream cheese and American cheese (Velveeta) and spice. If you have never ordered this when you go to Cafe Rio, I would encourage you to do so.
All you need is cream cheese, American cheese, cheddar cheese, and spices. Cafe Rio Copycat Queso is so amazing. There is so much flavor, but not too spicy. You will love this.
How to Make Cafe Rio Copycat Queso
1. Velveeta or American cheese comes in a brick. You want the yellow/orange cheese to give the queso its color. You only need 8 oz which is not very much when you purchase a brick of cheese. Velveeta is shelf stable until you open the package. Then you need to refrigerate it. Think wisely when purchasing your American cheese. Due to the fact that I love this queso so much, it does not bother me to buy a large brick of cheese, because this is on constant repeat at my house.

2. Cut the American cheese and the cream cheese into cubes.
3. Place the milk and heavy cream in a sauce pan that will hold at least 2 quarts. Drop in the cream cheese and American cheese cubes. Stir occasionally as everything heats up. You want the milk, cream, American cheese and cream cheese to be smooth and melted.
4. Add in the grated cheese, salsa, jalapeñoes and spices. If you want more heat, add the juice from the canned diced jalapeños.
5. Simmering all the ingredients is the key to amazing queso. Stir continually until everything is well mixed and heated through. The queso needs to be heated until it is almost to boil or a low simmer. Use a wire whisk to keep things mixed well.

Ingredients
- 2/3 Cup Heavy Cream
- 2/3 Cup Whole Milk
- 8 oz. American Cheese, Velveeta
- 4 Cups Cheddar Cheese
- 4 oz. Cream Cheese
- 1 Cup Salsa
- 1/2 Cup Diced Jalapeños
- 1/2 tsp. Cayenne Pepper
- 1/2 tsp. Cumin
- 1/2 tsp. Chili Powder
- Tortilla Chips
Instructions
- Chop the American cheese and cream cheese into cubes.
- Heat the milk and heavy cream in a saucepan.
- Once the milk is warm, drop the soft cheeses into the milk.
- Stir until melted.
- Add the cheddar cheese, the salsa, jalapeños and spices.
- Stir until everything is melted and smooth.
- This will thicken as it cools. Serve while it hot with tortilla chips.
