
While in Spokane, Washington, my husband and I visited Churchill’s Steak House. We ordered the Smoked Salmon appetizer and immediately became enamored with it. I came home and decided to replicate it. After serving this at a family function on Christmas Eve, and everyone raved about it, I decided to post it so you could try it as well.
Smoked Salmon Appetizer is a delicious appetizer filled with amazing flavors. Smoked salmon, hard boiled eggs, chopped red onions and capers are the main ingredient. It is served on toast points* with a dollop of sour cream. I love serving this for special occasions and not so special occasion. It is so good, I often find my guests would rather eat Smoked Salmon Appetizer than the main course.

Everything for Smoked Salmon Appetizer can be done in advance and then brought out and assembled very quickly when you are ready to serve.
How to Make Smoked Salmon Appetizer
1. But the Smoked Salmon. You can find smoked salmon at Costco in the refrigerated deli section. It is in a black package with a large window of pink smoked salmon. It is a 12 ounce package. This is the star of your show. There are two packages which means you plenty for several parties. Stick this in the refrigerator and get everything else ready.

2. How to Make Perfect Hard Boiled Eggs – Put 6 eggs in a sauce pan. Cover the eggs with water and put the lid on the pan. Put the pot on the stove and bring to a boil. Once the water begins to boil, you are done cooking the eggs. Keep thel id on your pan and take it off the heat. Set the timer for 10-15 minutes. Ten minutes if you like a little soft center and 15 minutes if you want completely cooked eggs.

After the timer rings, drain off the hot water and then add very cold water. Keep draining the water and adding new cold water until the water becomes lukewarm to cold. Let the eggs rest for another 10 minutes in the cold water and then peel.
Buy a Good Quality Smoked Salmon
3. Making Toast Points* – These are triangles of store bought bread that have been rolled flat, buttered and then baked in the oven at 400°.
Start by cutting the crusts off of 12 pieces of bread. Sometimes I have sandwich bread that is a little stale. Stale bread is perfect to be buttered and baked for Toast Points. You can use fresh bread as well.
After cutting the crusts off, using a rolling pin, or your fingers, smash the bread until it is very thin. Do you have memories of doing this is a child? Wonderbread was a new product when I was a kid and this was a favorite past time.


Spread softened butter on the flat pieces of bread. Cut each slice into four pieces on the diagonal to make toast points. Lay these on a cookie sheet and bake in a 400° oven for 10 minutes, turning them over halfway through. You want crispy brown edges. Let cool and now you are ready to assemble.
Assemble for a Self Serve Smoked Salmon Appetizer
4. Assemble the ingredients for a self serve platter. Place the sour cream, chopped red onions, chopped boiled eggs, and drained capers into small bowls. Arrange with spoons and then place on a tray.
Take the smoked salmon out of the package and place on a cutting board or platter. Cut both horizontally and vertically to create small squares of smoked salmon to fit on your toast points. The smoked salmon comes on a piece of cardboard. Make sure you slide the salmon off this before placing on the cutting board or platter. Once the toast points are cool enough to handle, place them with the rest of your ingredients.

5. Assemble each toast point to your liking. I like all the toppings, but by placing them separately and having a self assembly board, people can make their Smoked Salmon Appetizer the way they like.Place a square of salmon on the toast point and then top with a dollop of sour cream. Load the top with chopped hard boiled eggs, red onions and capers.
I cannot even tell you how great Smoked Salmon Appetizer tastes. Try something a little gourmet the next time you entertain.

Smoked Salmon Appetizer
Ingredients
- 8 oz. Smoked Salmon
- 6 Eggs, Hard Boiled
- 1 Med. Red Onion, Chopped
- 4 oz. Capers
- 1 Cup Sour Cream
- 48 Toast Points, Recipe Below
Toast Points
- 12 Slices White Bread
- 2 Tbsp. Butter, Softened
Instructions
Toast Points
- Cut the crust off the slices of white bread.
- Using a rolling pin, crush the bread and roll it out as flat as you can.
- Cut the bread into fourths, on the diagonal.
- Brush with softened butter and place in a 375° oven.
- Bake for 5 minutes and then turn over and bake another 5 minutes or until brown on the edges.
Smoked Salmon Appetizer
- Hard Boil 6 eggs.
- Place all eggs in a saucepan with hot water.
- Bring to a boil with the lid on.
- After water boils, turn the heat off and rest for 10 minutes.
- Drain and run cold water over the eggs until they are cooled.
- Peel and cut the the red onion into very fine pieces and place in a bowl.
- Drain the capers and place in a bowl.
- Pour creme fraiche into a small bowl.
- Cut the hard boiled eggs into small pieces.
- On a large platter, arrange the bowls of creme fraiche, capers, red onion and hard boiled eggs. Arrange the toast points around these.
- Cut the smoked salmon into small pieces on a cutting board and place this next to the platter.
- Each guest makes their own appetizers by placing a little creme fraiche on the toast points. Lay a small piece of smoked salmon on the creme fraiche and then pile on hard boiled eggs, red onions and capers.
