How to Make Red Velvet White Chocolate Chip Oreo Cookies
1. Measure all the dry ingredients and put them in a bowl and set aside. Add the flour, baking soda, salt, cornstarch and cocoa to a bowl and mix lightly.
2. Cut each cube of butter into small pieces. Place these in a large bowl and add sugars.Mix these together for four minutes. It takes a few minutes for the sugar crystals to get wrapped in the fat. This is a step you do not want to miss. I set the timer on my microwave for four minutes. This one step will make your cookies lighter, fluffier and taste so much better.
Room temperature or from the refrigerator, which kind of egg is best to use?
3. Add the eggs one at a time. Mix well. A lot of people say you have to have room temperature eggs, but I have not found this to make a difference when making cookies. Whether I use them out of the refrigerator or room temperature, it does not seem to change the cookie dough. If you are going to refrigerate the dough, what difference would it make?
4. Add the vanilla and red food coloring and mix well. You can lessen the red food coloring if you like. Less will make a lighter red cookie and more will make a darker red cookie.
5. Add the dry ingredients into wet mixture 1/2 cup at a time. Mix the dry ingredients until you cannot see anymore flour around the edges. Stop mixing at this point. You do not want to over mix the dough.
6. Crush the Oreos into smaller pieces. The best way to do this is by using your hands. The cookies will kind of divide into fourths when you crush them with two hands. I like bigger chunks in my cookies because Oreos are so good! There is a difference between Oreo crumbles and Oreo cookie powder. I prefer crumbles.
7. Pour the white chocolate chips and crushed Oreos into the cookie dough. Mix with a spoon into the dough. You do not want to use the mixer when adding these two items. The mixer will crush the cookies and not give you the chunks that make these cookies delicious.
These are the perfect cookies to make on Valentine’s Day!
8. Refrigerate the dough for 30 minutes. You do not have to do this step, but there is science behind refrigerating cookie dough. It actually makes the cookies taste and cook better and it gives the cookie height.
9. Form balls of dough and place on a greased cookie sheet. If you use an ice cream scoop to form the balls, roll them in a ball in your hands before placing them on the cookie sheets. The heat of your hands will create round, smooth balls which creates pretty cookies. Use the bottom of a glass to push the cookies down just a bit. Make sure to leave enough room for these cookies to spread while baking.
10. Bake in a 350° oven for 12 minutes or until cookies begin to crack.
