It is snowing today in Utah. Comfort food sounds like the perfect thing. I am staying home and watching some of my favorite movies. Garlic Tenderloin Steak Bites on on my mind and only take a minute to make. They pare so well with Can’t Put My Fork Down Mashed Potatoes. These hearty little bites of deliciousness will delight your palette and satisfy your meat and potato needs.
It starts with beef tenderloin sliced into chunks. Then cook them for only 30-60 seconds a side in a bath of butter and garlic. There is a touch of Worcestershire Sauce, too. All my favorite things wrapped into one small package. This is my favorite comfort food on a nice wintery evening.
How To Make Garlic Tenderloin Steak Bites
1. Beef tenderloin can be purchased in a large roast or in smaller steaks. A filet mignon is a slice of tenderloin. Before I purchase meat to make Garlic Tenderloin Steak Bites, I am always looking to find the least price point. Is it the roast or is it the steaks. Sometimes it depends on where I purchase my meats.
Making a Beef Wellington is one of my favorite things to make when purchasing a beef tenderloin. The left over pieces always end up as Garlic Tenderloin Steak Bites. But then again, sometimes, I just want the Garlic Steak Bites, so I make those.
Cook the Steak for only 30-60 seconds on each side.
2. Cut the tenderloin into small one inch chunks. Salt and Pepper these well. Let them sit on the counter for five minutes. This allows the salt and pepper to absorb into the meat a little before cooking it in the pan.

3. Add 3 tablespoons of butter to a large caste iron skillet. My Lodge deep dish skillet is my favorite. I use it all the time. It cooks things evenly and is easy to clean. Some people are afraid of caste iron because they feel they are hard to clean. There are easy instructions at the bottom of this post on how to clean a caste iron skillet.

4. While the butter is browning, peel the skins off the cloves. Use a large knife and turn it on its side. Separate the cloves from the bulb of garlic. Place the flat side of the knife and place on top of the garlic cloves. Push until you hear the crack of the skins. Peel off the skins and then grate on the small side of a box grater or finely chop.
5. Once the butter has completely melted and begins to brown, place the steak bites in the butter. Let them sit undisturbed for 30-60 seconds.

6. Use a spatula or tongs and turn the meat to the other side. Add the other 3 tablespoons of butter and sprinkle the garlic around the dish, in the butter. Once the meat has a crust on the bottom, add the Worcestershire sauce and stir.
7. Now you are ready to plate the Garlic Tenderloin Steak Bites. If you have more steak, repeat steps, 4 – 6 until all the meat is cooked. Once you take it out of the pan, place it in a dish and cover with aluminum foil.

I’m wondering about temperature… do you cook steak pieces on medium high?
dinasdiner
Medium high. You want the meat to have enough heat to create a crust on each piece.
