
Looking for a perfect light lunch or addition to your Baby or Bridal Shower Menu? These Cucumber Sandwiches are so good. They are simple and you really can’t believe the big flavor they have when you take a bite. Every time I make these sandwiches, someone texts me for the recipe.
All you need for Cucumber Sandwiches is a nice baguette loaf of bread, cream cheese, mayonnaise, dry Italian Salad Dressing, cucumbers and a little dill seasoning. If you love cucumbers like I do, these will be your new favorite addition to any party menu.

How to Make Cucumber Sandwiches
1. Buy a good baguette loaf of bread. I often purchase baguettes at Costco. For around $5 you can pick up two baguettes in the bakery. Harmons is a great place to buy bread, too. I love their baguettes as well. They are a little more expensive, but the quality matches the price.
2. Make the spread. Place softened cream cheese, mayonnaise and dry Italian salad dressing mix in a bowl. Using a small hand mixer and beat until everything is smooth and spreadable.
Plan ahead! This spread needs to be refrigerated for at least 4 hours or overnight. I have made these sandwiches plenty of times without making the spread ahead. I am here to tell you it does make a difference. Letting the flavors of the dry Italian Salad Dressing mix with the mayonnaise and cream cheese, deepens the flavor.
3. Peel the English cucumber and slice very thin. I love using my mandolin when cutting the cucumbers. On my mandolin I can adjust the thickness of the slices. When purchasing a mandolin look for the ability to do this. Some less expensive mandolin do not give you this opportunity. It is worth it to purchase a mandolin for a little more money to be able to adjust the thickness of your slices.
If you do not have a mandolin, thinly slicing the cucumber is still very possible with a kitchen knife. I have included a video of slicing a cucumber. If you are careful, you can have beautifully sliced cucumbers without a mandolin.
These are the perfect addition to any bridal or baby shower menu.
4. Slice the baguette. Cutting on the diagonal will create a slightly bigger piece of bread which gives you more room to place the cucumbers. Cutting straight across a baguette often yields smaller pieces of bread which makes it is harder to pile everything on it. Cut the bread in 1/2 inch slices. You want the bread sturdy enough to be picked up and to hold everything, yet thin enough to create a perfect bite.
5. Place a small amount of spread on each piece of bread. I like placing the mayonnaise, cream cheese mixture in a pasty bag, or a plastic bag and then cut off the corner. It helps get the right amount of spread on the little pieces of bread. I make a stripe across each slice of bread which equals about a tablespoon. Use an offset spatula to spread this mixture over the entire surface of the bread. You want this delicious mixture to be in every bite.
6. Place two cucumber slices on each piece of bread. You might have to overlap the pieces to get both pieces on there, but this adds to the charm of these delicious sandwiches.
7. Sprinkle on a little dill weed seasoning. Not only does the flavor of the dill pair well with cucumbers, but it adds a little garnish. These sandwiches are dressed up for a delightful center piece on your table.
8. These can be made ahead, but I prefer to make them right before serving. If making this for a party or shower, double the recipe. You need to refrigerate the sandwiches until ready to use. I like to place the sandwiches on a large tray and then use parchment paper in between the layers to keep them from sticking.

Ingredients
- 1 Cup Mayonnaise
- 8 oz. Cream Cheese
- 1 Pkg. Dry Italian Salad Dressing Mix
- 1 Baguette
- 2 English Cucumbers
- 1 tsp. Dill Weed
Instructions
- Mix cream cheese, mayonnaise and dry Italian salad dressing.
- Chill for four hours or overnight.
- Slice baguette on the diagonal in 1/2 inch pieces.
- Peel and thinly slice the cucumbers.
- Spread a dollop of the mayonnaise mixture on each piece of bread.
- Place two slices of cucumber on top.
- Sprinkle with dill weed.
